I am starting out as a food cart with the hopes of growing the business into a food truck. I am starting small so I can get a feel for the nature of the business and keep costs minimal. I want to offer holistic tacos. Non GMO, organic, sustainable and local. Think Community Supported Agriculture, Whole Foods adventure taking person. Hipster. Young urban professional. Student. Professor. NPR listener that understands the plight of the food chain and literally puts their money where their mouth is to, "Do the right Thing."
